Preparation

  1. Wash, trim, and peel the carrot. Cut into matchsticks and place in a bowl.
  2. Wash and trim the cucumber. Cut in half and remove seeds; slice each half into 3 pieces then place in a bowl.
  3. Wash and seed the bell pepper; cut into equal slices then place in a bowl.
  4. Drizzle with lime juice and season with salt and parsley.
