350 g macaroni, dry egg-free

3 tbsp olive oil

2 clove garlic, chopped

170 g green peas, frozen

0.5 tbsp lime juice

1 tsp lime zest, grated finely

10 g coriander, fresh, chopped

0.5 tsp fine sea salt

  1. Cook pasta in a large pot of boiling salted water until al dente.
  2. Add peas to pasta and drain immediately.
  3. Run cold water over pasta and peas until cooled completely.
  4. Drain and transfer to a bowl.
  5. In a small skillet, heat olive oil.
  6. Add garlic and cook for 1-2 minutes.
  7. Remove from heat and stir in the salt, lime zest, and lime juice.
  8. Drizzle the dressing over pasta and peas.
  9. Stir in the cilantro and refrigerate for 1 hour.
  10. Serve.
