Red onion muffin with sesame seeds

200 g red onion, finely sliced

30 g white sesame seeds

200 g buttermilk

80 ml coconut oil

250 g whole wheat flour

2 pcs egg

0.5 tsp baking soda

2 tsp baking powder

1 tsp thyme, dried

1 pinch salt, table

  1. Preheat oven to 180°C.
  2. Line 12 muffin holes with paper patty pans.
  3. Start by caramelizing your onions in 2 Tbsp of oil until nice and golden. 
  4. Set aside.
  5. In a large mixing bowl, whisk together flour, baking powder, baking soda, thyme and sesame seeds.
  6. In a separate mixing bowl, whisk together egg, buttermilk and oil until combined.
  7. Pour this mixture into the dry ingredient mixture, and stir with a spoon until just combined.
  8. Stir in caramelized onion.
  9. When well-combined, spoon the batter to muffin tin, to 2/3 full.
  10. Bake for 20-25 minutes or until firm to the touch.
  11. Serve when cooled to room temperature.
